Maple Recipe:   Maple Bread Pudding

¾ cup maple syrup                                1 tsp. lemon juice
2 cups of milk                                         ¼ tsp salt
2 eggs                                                      ¼ tsp vanilla extract
½ cup chopped walnuts, pecans or raisins
14 thick slices of bread (without crusts)

Pour maple syrup in the top of a double boiler. Butter each slice of bread, then cube, Add bread to the syrup, along with nuts and lemon juice. In a medium-sized bowl, beat the milk, eggs, salt & vanilla and puor over the bread mixture. Do not stir, but press the bread down with a fork so that it is thoroughly moistened. Set over boiling water & cook, uncovered for 1 to
1 ¼ hours, or until a knife inserted into top comes out clean. Add more boiling water to the bottom of pa pan as needed. The pudding makes it own sauce, spoon it over each serving.

Maple Recipe:   Maple Gingerbread

         1 cup maple syrup                                    1 tsp. baking soda
         3 Tbsp. Shrotening                                    1 tsp. ginger
         1 cup boiling water                                    Flour

Mix maple syrup, shortening, & ginger. Sift in a sufficient amount of flour to make mixture stiff. Add baking soda to boiling water and add to mixture. Beat well and bake until done.

Maple Recipe:   Maple Barbecued Pork Ribs

1 rack of spareribs (about 4#)                  2/3 cup maple syrup
½ tsp salt                                                        2 Tbsp rice-wine vinegar
1 Tbsp soy sauce                                         1 tsp black pepper

Rub ribs with pepper and salt. Place in a shallow non-aluminum pan. In a small bowl, mix together maple syrup, vinegar & soy sauce. Pour over ribs, cover and chill overnight, turning occasionally. Remove ribs from pan and grill over moderately hot coals (about 20 minutes per side) or until done. Don't let them burn.

Maple Recipe:   Spiced Maple Pears

         Ripe pears (stem in place)                  2 cinnamon sticks
         3/4 cups maple syrup                           2 Tbsp sugar
         8 cracked Cardamon seeds               6 cloves
         2 cups medium-sweet white wine

Preheat oven to 400º. Place cinnamon sticks in a deep 2-quart casserole dish. Push a clove inside each pear and lay them on their sides in the dish. Scatter the cardamom seeds on top of pears. In medium saucepan over low heat, gently cook the wine, maple syrup & sugar until dissolved. Pour the mixture over the pears, ensuring that they are half covered (add more wine or water if necessary.) Cover the pears and poach for 45 minutes to 1 hour or until tender, basting occasionally. Remove the cloves, cardamom seeds, & cinnamon sticks. Cool slightly before serving. They may also be served chilled or at room temperature.

Maple Recipe:   Apple Maple Pie

         6 apples, sliced                                  2/3 cup of maple syrup
         ¼ tsp salt                                             ¼ tsp. nutmeg
         ¼ tsp. cinnamon                                 4 Tbsp flour
         2 Tbsp butter

Fill 9” pie shell with sliced apples. Mix maple syrup, spices and flour together. Pour maple syrup mixture over the apples evenly. Dot with butter, and cover with top crust. Bake at 400º for 20 minutes. Turn to 350ºfor 30 minutes or until crust is golden brown.

For a crumbled topping: combine 1 ½ cu[s brown sugar, 1 cup flour, and 1 stick of butter (1/2 cup). Blend together in bowl until crumbly. Put mixture on top of pie.

Maple Recipe:    Lemon Maple Zucchini Bread

             3 eggs                                                 1 cup maple syrup
            ½ cup vegetable oil                           1 tsp vanilla extract
            1 Tbsp Baking Powder                    ½ tsp salt
            1 cup whole wheat flour                 zest of 1 lemon *finely grated)
            1 1/2 cups grated zucchini            1/1/ cup flour

Preheat oven to 350º. Grease a 9-by-5 inch loaf pan and set aside. Beat the eggs with an electric mixer for 2 minutes. Gradually add the maple syrup, oil, vanilla & lemon zest. Stir in the zucchini. Combine the flours, baking powder & salt in a large bowl. Make a well in the center, then sir in the zucchini mixture. Blend until smooth, and then turn into the prepared pan. Bake for 50-60 minutes. Remove and cool completely on a wire rack.

Maple Recipe:   Maple Pork Chops

6 pork chops (cut 1: thick)                        1/8 tsp pepper
¼ cup maple syrup                                    ½ tsp Chili Powder                       
1 Tbsp Worchestershire sauce               1/4 cup water                 
1 Tbsp Vinegar                                            ¼ cup chopped onion                
1 ½ tsp Salt                                                    mushrooms (optional)

Mix ingredients together & pour over the pork chops. Cover and bake 45 minutes at 400º, basting occasionally. Uncover & bake 15 more minutes. Place chops on platter & thicken the sauce with flour & pour over the chops.

Maple Recipe:   Candied Sweet Potatoes

Cook sweet potatoes until tender but not soft.  Peel and slice lengthwise and arrange in buttered baking dish. Cover with maple syrup or maple sugar. Dot with butter add a little water. Bake until potatoes are glazed. 
Carrots may be prepared in the same way.

Maple Recipe:   Braised Corned-Beef Brisket with Maple & Bourbon

1 corned-beef brisket (about 4#)
1 cup maple syrup
¼ cup bourbon

Preheat oven to 325º. Place brisket in a Dutch oven and bake 2 hours, uncovered. Reduce heat to 275º and bake covered for an additional 2 ½ hours. Discard all liquid in pan except ½ cup. Add maple syrup and bourbon and continue baking, uncovered, basting brisket until glazed (about ½ hour). Let brisket rest for 1-15 minutes before slicing.


Maple Recipe:   Maple Caramel Popcorn & Nuts

         3 Tbsp. corn oil                                             1 cup maple syrup
         1/3 cup raw popcorn                                   1 cup of sugar
         ½ tsp. white vinegar                                    2 Tbsp. butter
         1 cup of peanuts

Heat oil in large, heavy skillet over medium-high heat until 1 kernel placed in oil pops. Add popcorn, cover skillet and heat, shaking pan until all corn is popped. Place popcorn in a large buttered roasting pan, add nuts and toss. Preheat oven to 200º degrees. In a medium saucepan, bring maple syrup, sugar and vinegar to a boil, stirring to dissolve sugar. Cook, without stirring, washing any crystals down sides of an with a brush dipped in cold water, until a bit of syrups dropped into cold water forms a long thread,
(240º on a candy thermometer). Stir in butter until melted.
